
Grilled Cheese with Mojo

Grilled cheese with mojo is one of the most classic starters of Canarian cuisine. It is made with goat cheese or mixed cheese, fresh or semi-cured, cut into thick slices and grilled until crispy on the outside and melted on the inside. It is served hot accompanied by red mojo (with pepper and paprika), green mojo (with cilantro or parsley), or drizzled with palm honey, traditionally produced only in La Gomera.
Although Tenerife does not have its own cheese designation of origin, the archipelago has three recognized PDOs: Majorero, Palmero, and Flor de Guia. It is a dish commonly found in guachinches and Canarian cuisine restaurants throughout the island.
